Symonetta Raymond Barker has been in The Bahamas since the early 80’s. Most people will know her from the Artists and Artisans Association, which she founded to expose and promote unexposed artists. The association operated out of Longbranch, her home at the time. She presently runs Creative Design Concepts, a company that creates and designs a look for people on a limited budget.

Macaroni au Gratin

Cube a 1/4 pound of ham. Put your pasta on to boil. Heat peas in hot water. Heat your milk. Heat a 1/4 cup of butter and mix. Gradually pour in a /4 cup of flour in the heated butter and mix as you go. Slowly pour in the heated milk to butter and flour and mix as you pour. Add 1/2 teaspoon of nutmeg, a teaspoon of white pepper and a1/4 cup of parmesan cheese. Mix together. Take off the stove and add in your two egg yolks. Mix together. Place your boiled pasta in a greased baking dish. Add the ham and the peas to the top of the pasta then add mozzarella cheese to the top of that. Pour your sauce over this mixture, sprinkle on some parmesan cheese and then place in the oven at 475 degrees for approximately 8 to ten minutes.

Ingredients

1/4 lb. ham cubes
mueller’s rigatoni 10 oz.
small can of peas
1 & 1/2 cup milk
1/4 cup butter
1/4 cup flour
tsp. nutmeg
1 tsp. white pepper
1/4 cup parmesan cheese
2 egg yolks
mozzarella cheese
