Eddie Dames or "Fast Eddie" as he is known by most people is the Assistant Director of Culture with responsibility for the Junkanoo Secretariat. Most people will know him as a lead dancer for the Shell Saxons Superstars. He has been in the entertainment business for over thirty-five years and has been an MC at over five hundred events. We were pleased to have him not only cook for us but to perform one his stories on the show.



Junkanoo Crab Soup

Cut up some okra and place in a frying pan with some onion, salt and a little oil. Let this fry under a low flame. Crush most of the okra seeds in the process which should help to get rid of most of the slime.

Place your ready cut pasta on the stove to boil.

Clean a Crab and save the fat. Keep the the rest of the body to add later.

Place the onions, celery and thyme in your pot. Add in the ham and stir. Add the conchs followed by the stew beef and salt beef and stir again. Add the spare ribs and bring all of this to a simmer.

Add your seasoned salt to the pot and stir. Add black pepper to taste, three bay leaves, all spice and a half of a goat pepper and stir. Add the tomatoes followed by the crab fat and stir. Add your crabs (legs, biters & backs). Add one lime.

Add your okra mix, cabbage, carrots, potatoes, sweet potatoes, one can of corn, one can of red kidney beans. Mix all of this together with your pasta and then serve.
