Dr. D. Gail Saunders is the Director General of Heritage for The Bahamas. She is this country's foremost authority on Bahamian history, having written numerous books on the subject. She is the second member of her family to appear on Guess Who's Cooking. Her husband, Mr. Winston Saunders, was a guest during our first season. It's our pleasure to have Dr. Saunders with us this evening.



Shrimp Fried Rice

Mince one half of an onion, one half of a green pepper, one stalk of celery, six mushrooms and one red pepper. Cook one cup of white rice. Add oil to a pan and heat. Add vegetables to heated pad and let fry a bit. Add black pepper to taste. Add shrimp, as desired, and let simmer for a few minutes. Add soy sauce to your desired color and taste. Add rice to vegetable mixture and mix.

To a mixing bowl add two eggs, a little evaporated milk and mix vigorously. Add a teaspoon of butter to a pan and heat. Scramble the eggs in your heated pan. Add eggs to the rice and vegetables and mix together. Serve as a dish alone or as a side dish.

1/2 of 1 onion
1/2 of 1 green pepper
1 cup rice
2 cups water
1 stalk celery
6 mushrooms
1 red pepper
1 tsp. butter
corn oil
black pepper to taste
shrimp
soy sauce
2 eggs
evaporated milk
