Dr. Nicolette Bethel joined us as our first guest in season one and we are pleased to have her return this season to cook with us again. She is a playwright, author and the Director of Culture for The Bahamas in the Ministry of Youth, Sports and Culture. Nicolette's play Powercut was made into a film by Plantation Pictures Limited in 2001 and her hew play The Children's Teeth is in the process of being workshopped by Ringplay Productions.

Coat a pan with Olive Oil. Add five cloves of chopped Garlic, Basil, Oregano, Salt to taste and mix together. Lower the flame and continue mixing. Add four chopped Mushrooms and let brown a little. Add a little Red Wine Vinegar to taste. Add the whiter part of the Spring Onions followed by the Olives (black and green) and a half of one Tomato. Let this mixture soften up a little and make some juice. Add Snow Peas and Capers followed by the cooked Mueller’s Spaghetti. Add the remaining part of the Spring Onions (the more green part) followed by some more Basil. Turn up the heat and mix together. Put this onto a plate, sprinkle on some Parmesan Cheese and serve.

1/2 of 1 tomato
snow peas
capers
Muller’s Spaghetti
(made in America)
parmesan cheese
