Steak with Mushroom Sauce
and Roasted Potatoes

Anthony Jervis has been an architect for approximately thirty years. He has not only designed various buildings but has been involved with the preservation of Bahamian buildings for quite some time. In one of his most recent projects, he served as the Chief Architect for the restoration and renovation of the Villa Doyle house into the National Art Gallery of The Bahamas. He has served on the boards of a number of foundations and is strong supporter of the arts.



Cut into quarters (bite size pieces) approximately five to six Spring Potatoes. Sprinkle on Salt to taste and add approximately two tablespoons of Olive Oil. Shake the Potatoes until they are properly coated. Sprinkle on some Black Pepper and Thyme to taste. Place, uncovered, in a 350 degrees oven for 30 to 45 minutes.

Chop approximately ten to twelve Mushrooms. Add one tablespoon of Olive Oil to a skillet and heat; add the Mushrooms followed by Black Pepper and Salt to taste and then stir. Add one tablespoon of Butter to your pan and mix in. Add some Thyme to taste followed by one quarter of a cup of Red Wine. Lower the flame and let sit.

Lightly season Steaks with a pinch of Salt and Black Pepper to taste. Dip steaks into Worcheshire sauce and coat them. Add Steaks to your oven and cook. Once cooked, cover the Steaks with your Mushroom Sauce and serve with the Roasted Potatoes and a Green Salad or Mixed Vegetables.
