Joy Sweeting has been cooking since she was a child, helping around the house. During her time studying in Canada, she worked in various restaurants and while at a restaurant called The Commissary, she wrote a cookbook called "The Commissary Book of Edible Gifts and Party Foods". This was a food guide for the patrons in the area. We are pleased to have Joy cooking with us again this season.

Put on your pasta to boil. Make a paste with three cloves of Garlic and Sea Salt and add to a mixing bowl. Chop approximately ten Scallions, a quarter of a Purple Onion, some Lemon Zest (or Lemon-Pepper Seasoning), add to bowl and mix together. Add three teaspoons of Brown Mustard and some Fresh Cracked Black Pepper. Add a quarter cup of Cider Vinegar and the juice of two Lemons. Add a half of a cup of Olive Oil and stir. Add the cooked Pasta to the mixture followed by cooked Shrimp, some Bell Pepper and Pickled Pepper Rings. Add some chopped Basil, Cherry Tomatoes, Olives, Feta Cheese and Marinated Artichokes. Let this mixture sit in the refrigerator for approximately two hours before serving.

1/2 purple onion
lemon zest
3 tsp. mustard
fresh cracked black pepper
1/4 cup cider vinegar
juice of 2 lemons
1/2 cup olive oil
shrimp
lemon-pepper seasoning
1 box Muller’s Rotini Twists
(made in America)
pickled pepper rings
cherry tomatoes
olives
feta cheese
marinated artichokes
walnuts
brown sugar
juice of 1 orange
salt & pepper
1 tsp. sugar
1/4 cup balsamic vinegar
3 tbsp. oil
mint
