Peanut & Benny Cakes and Coconut Tart

Coconut Tart

To three cups of flour add two teaspoons of baking powder, one cup of sugar, one half of a cup of shortening and mix these ingredients together. Add to this mixture two teaspoons of vanilla and a half of a cup of evaporated milk and continue mixing. Use water in mix as needed. Knead this mixture after it has come together. You may have to add some more flour. With a rolling pin, roll out the dough and use a saucer as a guide to cut out the shapes to make your tarts. Add coconut filling to the dough and fold over. Use a fork to pinch the edges together. Spray a cookie sheet with Pam cooking spray and place the tarts on the sheet. Bake for twenty to twenty-five minutes at 350 degrees.

Benny and Peanut Cakes

Heat a pan and then add one cup of Sesame Seeds. Keep turning so they don’t burn. Remove seeds from the pan. Add one half cup of sugar to pan and stir until the sugar has turned to a liquid. Add a pinch of orange zest and continue to stir. Add one cup of baked peanuts and combine together. Quickly form into candy shapes and let cool. Heat the pan again and add one half cup of sugar and let this sugar also become liquid. Add cooked sesame seeds and mix. Form quickly in candy shapes and let cool.

3 cups flour

2 cups sugar

1/2 cup evaporated milk

1 cup water

2 tsp. vanilla

2 tsp. baking powder

1/2 cup shortening

1 cup grated coconut

1 cup sesame seeds

pinch of orange zest

1 cup baked peanuts

pam cooking spray
